Ingredients
Low-fat cooking spray
4 mushrooms, sliced
¼ onion, chopped
¼ red pepper, chopped
Ground black pepper
1 egg
3 egg whites
½ tomato, deseeded and chopped
3 tbsp water
1 wholewheat pitta, toasted and halved
½ avocado, sliced
Instructions
Coat a frying pan with low-fat cooking spray and place over a medium heat. Add the ‘shrooms, onion, red pepper with a grinding of black pepper. Cook for 3 to 4 minutes. Meanwhile, in a bowl, combine the egg, egg whites, tomato and water. Whisk together and add to the frying pan. Cook, stirring, for 3 to 4 minutes or until the eggs are firm. Fill each pitta with half the mixture and top with the avocado. You’ll have all the energy you’ll need for an intense, muscle-building workout.
